Vietnamese Smoked Chicken Noodle Salad Recipe (Gluten Free)
Chicken noodle salad is a combination of the healthy chicken and vegetables with the likeness of noodles. It is a great combination to have as a salad, which suits the time and nutritional fact handy. It has received a lot of twist in its preparation depending upon the region where it is being prepared. The origin of this dish is claimed to be in China, but prominent researchers claim this dish to be mixed fusion that arose from the Asian cuisine. The following way defines the way to prepare the authentic style chicken noodles salad.
Ingredients
Chicken breast (smoked) – 300gms (10.5 Oz)
Oyster sauce – 20 grams (0.7 Oz)
Soy sauce – 20 grams (0.7 Oz)
Fish sauce -20 grams (0.7 Oz)
Chili sauce – 20 grams (0.7 Oz)
Lime juice – 1 table spoon
Noodle – 100 gms (3.5 Oz)
Onion – 1 medium sized (finely chopped)
Spring onion – 1
Carrot – 1 medium sized (grated)
Bell pepper (yellow) – 1 medium size (sliced in thin circles or finely hopped)
Bell pepper (red) – 1 medium size (sliced in thin circles or finely hopped)
Chili – 1-2 as per taste
Cherry tomatoes – 7 (fresh)
Sugar – 20gms (0.7 Oz)
Parsley leaves- a sprig
Mint leaves – a sprig
Ginger – ½ inch grated
Method For Sauce::
1) In a bowl mix all the sauces along with pepper, lime juice, ginger and sugar.
Method For salad:
1) Boil the noodles in water to make them ready for the preparation and set them aside.
2) In a bowl, mix the vegetables, carrot, onion, bell peppers, cherry tomatoes, spring onion, mint and parsley.
3) Add the smoked chicken breast to the vegetables and put the sauce to give it a mix.
Serving
1) On the serving plate, place the noodles first then put the salad prepared with vegetables and chicken.
2) Toss the noodles well along the chicken and vegetables to give the finishing touch.
