Famous Mumbai Vada Pav Recipe
The vada pav is tremendously famous among the Mumbaikars in special and all the Maharashtrians in general. The popularity of the dish has reached its peak due to its vegetarian nature as everyone can enjoy it irrespective of their food choices like that of veg or non-veg.
Vada pav was once considered as “a poor man’s food”, but now every individual can be seen munching the bite of it, as the stalls (thelas) are receiving more high class elite people standing in queue for their turn in getting one. Now, its not required to stand in queue or to travel to Mumbai for getting your share of bite, as you can make the lip smacking snack in home only with the help of the steps below.
The whole process is divided into 3 parts
1 Batter
2 Bonda
3 Chutney
Serving: For 4 persons
Ingredients
– 4 pavs
– 3 potatoes
– Green coriander – 1 bunch
– Turmeric (haldi)- 1 tablespoon
– Red chili powder – 2 tablespoon
– Green Chili 5-6
– Red mustard – tablespoon
– Lemon – 1 medium size
– Ginger – 1 medium size
– Garlic – 10-12 cloves
– Cumin jeera – 2 tablespoon
– Curry leaves – 10 leaves
– Salt to taste
For the batter
Ingredients
– Gram flour
– Baking soda
– Turmeric
– Red chili powder
– 2 tablespoon of rice flour for making bondas crusty
– Whisk the batter for 3-4 minutes
Method –
1> Mix the gram flour with enough water and salt to taste, to make a thick and smooth paste.
2> Do ensure that water is added slowly and not in huge amount as a lot of water can make lumps or uneven batter
3> Add a pinch of salt and some finely chopped coriander leaves
4> Keep the batter aside
for Bonda
– 1 tablespoon of oil
– red mustard seed (rye)
– Asafoetida (hing)
– garlic powder
– ginger powder
– curry leaves
– turmeric powder (haldi)
– mashed potatoes
– chili powder
– lime juice
– chat masala
Method –
1> Take a medium size frying pan and pour 3 table spoon of oil and add the mustard seeds around 1 tablespoon
2> Once the mustard starts to crackle then add asafoetida (hing)
3> now add ginger-garlic powder
4> Take the boiled potatoes ,cut them into medium size and mash them very finely.
5> Make a green paste by Combining curry leaves, Chopped Ginger, Garlic Cloves, Green Chilies and put in the mixture of potatoes.
6> With the help of the hands try to give the mixture a shape of ball.
7> Now, dip the balls into the batter and then fry it till the balls turns slightly golden in color.
For chutney
Ingredients
– 2 tablespoon of refined Oil
– a pinch of Hing (Asafoetida)
– 2 spoons of chopped ginger-garlic
– 50 grams of coconut powder
– cumin powder and chili powder
– chopped green chilies
– peanut and sesame powder
– salt (as per taste)
1> Roast the peanuts and sesame seeds and then crush them inside the mixer
2> add the asfoetida (Hing) and chopped green chilies
3> add the ginger and garlic powder to this mixture to give a rich treat
4> add coconut powder and stir till it gets slightly colored
5> add cumin powder and chili powder slowly and keep stiring
6> now add the peanut and sesame seed powder which is crushed in the mixture grinder
7> add salt to taste and stir for a while and the chutney is ready to be served
For getting the real pleasure, cut the pav from the middle and make sure the other end is intact ,and then apply the green paste lightly on one side of the pav and on the other side apply the red chutney and put the bonda by pressing a bit .
Now slowly munch and relish the bite ,authentic feeling of the Mumbai street side.
